Baked up a mushroom pizza on Sunday on my 1/2 aluminum plate. The oven was preheated to 500 degrees on convection and the plate was around 525 on top at the launch. Total bake time was a hair over 4 minutes, with the final 2 minutes on convection roast, which turns the top electric element on. I think the top could have used a bit more color but I was starting to get some browning on the cheese, probably from the grated pecorino that I blended with the mozz before I froze it (my lame attempt at preventing clumping).
