Mark's cook shack . Finally ready for pie!
« on: June 09, 2013, 01:31:42 PM »
Well this project, deck, deck extension, cook shack was planned last Nov. I hired out the construction project, 1st contractor was here 2 weeks in 2 months. He got fired. 2nd contractor took over, he was a life saver as the cement slab and support posts were already in place and he had to finish someone else's plan.
Today will be the 1 st pie cooked in the new shack. I did roast coffee beans yesterday so I know the stove works at least.
Here are some pics. Western theme decorations to follow as time permits. Gives us something to look forward to.

Way cool, best of luck with the pie.  How is the 2 stone working out?   I will use mine tonight for the first time since last summer (Wfo not available for a month or 2).

Thanks all for looking. The 2Stone likes the shack as evidenced by the pie it cooked.

65%Caputo Pizzeria flour/35%KABF
61%hydration
0.9%IDY
1.5% fine sea salt
3.5% EVOO
1.5 % bowl comp

Flour temp prior to mix 56.3F
Water temp 118F
Dough ball temp after knead 81.5F
Dough ball weight 372g

Cold ferment in fridge 40F 22 hrs
Bench rise before bake 2 hrs
Stone temp approx 650 at launch
Bake time 5 min

Observations: WOW! My cook shack/2Stone done good.
Crust light, tasty and a slight crunch.
Toppings delicious, BUbba's sauce, TJ Ciliegine whole milk fresh mozz, Vermont smoked Pepperoni, spicy Italian sausage, green onion, Calibrian chile oil, home made.

Wll definitely do again!

Yep, very cool.  Curious why the enclosure though.

I cook outside year round. Roasting coffee beans creates a lot of smoke. Smoking meat and baking pizza. My old shack was a roof with 2 half walls but covered with tarps during the wet season. The current shack opens up on both sides and the front doors so I get good ventilation in the dry weather and stay dry in the wet. 4 vents under the roof will provide good draft once I install vent fans.
