How to handle high wind?
« on: June 13, 2013, 08:53:06 AM »
I've got everything somewhat figured out for baking 15 pizzas at a department picnic tomorrow.  The one factor I didn't think about is that the winds are forecast to be about 15-20 mph tomorrow.   Anybody have experience with trying to make pizzas in the wind?   I'm thinking my biggest problem will be the flour going all over the place.   I'm going to bring a couple large pieces of cardboard and duct tape and try to build a bit of a wind shelter on a picnic table for my prep area.

Any other thoughts on dealing with the wind?

Turn the oven so it is 3/4 away from the wind.

For the prep table I would set up a canopy with sides over the table. In comp BBQ we did it all the time and it is easy, relatively, and works. You may have to anchor your canopy so it doesn't blow away. I use plastic buckets filled with water and tie to the corner posts. Easy to transport empty buckets and cheap.

good luck. send pics

A canopy isn't really an option this late in the game.  But, I stopped by the shelter over lunch and two sides of it are actually concrete block walls, so I'll be able to find some wind protection one way or the other.

The cardboard and Gorilla tape did the trick.  Picnic was a success and the pizzas were a big hit.

Here's a link to all pics:  http://abprice.smugmug.com/Other/2013-06-14-Pizza-at-AIS-Picnic/29986789_Gq3P9D#!i=2575223161&k=8dGmBCn

And here's the wind protection:
