ITs funny, cause mushrooms are the one topping that many, many people prefer canned....but I think what they really prefer is PRECOOKED. There is a definate difference, a BIG difference betwwen cooked and raw shrooms on a pizza. I like both....the precooked shrooms are much meatier. If I were using an expensive shoorm, like oyster, shitake, king bolete....I would definately saute the fungi....the flavor concentrates, the excess water cooked away.
The thing about mushrooms on a commercial level is that cooked mushrooms yield about 25% of the raw state....That makes the pricing different.......once you consider the customer feedback, its a tough call.
