Favorite mushrooms on pizza?

Just wondering what your favorite mushrooms are to go on pizza.  I always sautee them up or nuke them first to reduce the moisture.  I'm not a fan of buttons, but I love cremini and have been enjoying some white portabella's from the farmers market of late.   I also like shitakes and porcinis, but  I'm thinking about branching out there and trying some more "exotic" kinds.  Thoughts and opinions?

I use button or Cremini, thickly sliced and roasted on a half sheet pan in a hot oven with EVOO, shallots, salt, pepper, fresh thyme and a half cup of dry white wine like Sauvignon Blanc.

Basically, riffing on duxelles, but not finely chopped.

Thinly sliced crimini raw. 50 second bake.

Well, I guess with the kind of heat you're packin' water just evaporates leaving you with bliss.

At the WFO place I recently worked at, I ran a special with four mushrooms and a ricotta base that was seasoned with porcini sea salt.  The porcini sea salt really brought some depth to the whole thing.  It was very, very popular.

I have used oyester mushrooms before.  They have a great flavor and texture to them but a bit pricey.

As far as regular mushrooms being watery, here is a tip.  Look for mushrooms that aren't in the wrapped packages.  Those tend to be watery when cooked.   Many big chain grocery stores have bins of loose mushrooms you can buy by the pound.  It's next to the shitakes and portabellos.  Because the mushrooms are allowed to air out, the get rid of most of the excess moisture.  You can slice them thick or thin and when you bake them up, they won't puddle like the wrapped ones.   Even in a low temp longer bake situation.

Great tip!   I hadn't thought of that before, and my Wegmans does have a few different kinds available, bulk. 

There's a mushroom farm near me that I've been meaning to visit, so between that and seeing some nice varieties at the farmers market, it's time to expand my fungus horizons.  Afterall, just how many different kinds of cheese and greens can a girl eat?

For me, raw Cremini are the best. But I like just the regular white ones too. I slice them thin.

ITs funny, cause mushrooms are the one topping that many, many people prefer canned....but I think what they really prefer is PRECOOKED.   There is a definate difference, a BIG difference betwwen cooked and raw shrooms on a pizza.  I like both....the precooked shrooms are much meatier.  If I were using an expensive shoorm, like oyster, shitake, king bolete....I would definately saute the fungi....the flavor concentrates, the excess water cooked away.

The thing about mushrooms on a commercial level is that cooked mushrooms yield about 25% of the raw state....That makes the pricing different.......once you consider the customer feedback, its a tough call.

Porcini. Sauté.... Add an acid..... Reduce. Tartuffe if you have them. If they are white layer them on when the pizza is done. Black? Layer them on before you bake.

I blanch mine and then run them through a salad spinner to get rid of the moisture.

Love ANY type mushroom with truffle oil   :drool:  Especially great on grilled steaks or even just on bread!

I use the cheapest fresh mushrooms i can find. Usually white button. What i do is brush the dirt (manure) off. Never rinse under water. Slice thin (paper) and wrap in a paper towel and crack some sea salt over them and place in the fridge. After 15 min all the moisture is purged and it only takes 90 seconds in your 650F oven.

Chanterelles mushrooms are my preference...
