3 minute bake in home oven

My first time posting photos and my first bake on my steel plate.  These were taken with my phone.  I appologize for their quality.  I baked it at 550 in 3 minutes on 3/4 inch steel.

The broiler kicked on about 50 seconds in.

Pictures i have taken of my own pies have proven very deceptive as to the actual color of the crust. Did you find the top/bottom to be pretty evenly done?

The top and bottom were close to cooking eveningly.  Although I cooked a second pie it was cooked just about perfect.  The bottom wasnt quite as charred.

Damn, steel does give some great underbelly charring.  Great looking pizza--coming from a guy whose username references a certain Virginia state school to the north of Blacksburg. Go 'hoos!

I was definitely pumped to be pulling the pie out at the 3 min. mark.  Im very happy with my first bake on steel.

How much does your racks sag?  Mine sag on a 16 x 16" 1/2" plate

 My rack is sagging also but not to point that im worried about it failing.  I dont know what my plate weighs it is pretty heavy.  My plate is round though.  Its 16.5" in diameter.  I dont know if that results in less sag or not.

Your pizza looks very good. I would think though the your top could use more browning. Was your plate placed on the rack in the highest position? If not, I bet if you moved it up and the broiler kicked on around 50 seconds, the pie would be even better.

My plate was on the top shelf.  Im thinking i could have opened the door a little before launching the pie so the broiler would have kicked on sooner.

My bake tonight.  My best yet although I went to heavy on cheese and sauce.  How many ounces should be on a 15 inch pie? (sauce n cheese).

That looks really good. I like the color better than the previous. For a 15 inch pie I would use about 400G. You can vary it a bit from there depending on how thick you want the pizza and the crust.
