Good place to buy blue steel pans
« on: June 23, 2013, 05:10:47 PM »
So Ive been making NY style and am ready to try to accomplish another style. The last week I have been reading a lot of post in this section trying to understant this style and learn as much as I can on my own. Now I am looking to buy a good pan to start making the pie in, Can anybody refer to me to a reputable source to where I can purchase one or two of these pans. Blue steel is what I am looking for. I assume buy reading thats the holy grail for sicilian pies. Thanks

Afaik the blue steel pans are not available anymore. I got 3 pans here http://detroitstylepizza.co/detroit-style-pizza-pans/ and they are already pre-seasoned and ready to bake with. I've made great pizzas many times with these pans. I believe the bluing process was to prevent rusting so these pans work great but just wipe them out. If they do get wet or if you really do have to wash them for some reason put then in an oven to dry them quickly.

These are the ones I'm using. It takes 5-8 pies before they completely stop sticking.
Pizza is not bread.

I just found this and posted it in the L&B thread. Not sure if it's blue steel, black steel, carbon steel. I do know it requires seasoning.

Camaro10,

I got my Sicilian pan from Lloyd's.  I have the 14" with the lid.  It is quite expensive but worth it.  I had a warped ss pan that I hated even though it was seasoned.  Wish I saw the Lloyd's first  :-\

Good luck and post some pics of your Sicilian pies when you get your pan.

Paderno World Cuisine Blue Steel Baking Sheets

I have the 15x11. They rock. A little shallower than the Detroit style pans, but the quality is outstanding
Here's the link showing when I bought mine 2 1/2 years ago
