General Mills Gold Medal All Trumps High Gluten Flour

Hey guys, do you like this flour for NY pizza?
Could you rate and a brief comment in your experience?
This is the first time I bought this flour, I always had KASR and GM better for bread.
I still don't use it, trying to make a batch to make pizza in the weekend.
Let me know your comments.
Also have anybody used a brand of Mozz cheese called Caputo and also your review.

I grew up in the NJ/NYC pizza world and it is a standard brand.  I use it in my bakery/pizzeria for pizza dough.  I use GM Harvest King Flour for our breads/bagels.  I have no experience with that cheese.  I use loaves of grande whole milk mozz and provolone.  Good Luck!  Walter

It is a very popular flour on these forums, I have never used it, but if you just search "all trumps" in the top right, you can get tons of information.

Great just wanted to be sure,  I got a 50 lbs bag for $16.00,  this saturday I will start.selling pies for pick up only but couldn't find kasl flour so my second option was all trumps.
Also got 6 in 1 canned tomatoes would yo go for that brand over cento?

I'm in the minority, but I'm not a fan. It might be good for a same day dough where the fermentation doesn't develop a lot of gluten and/or in high oil/American hybrid settings, but for multi day cold ferments, it's really difficult avoiding a tough crust with this much protein.

This is 14% protein, as is KASL, another flour that I feel is unsuited for NY style. I prefer bromated flours in the 12.7% to 13.2% range.

Excellent flour.  Mix with 33% to lower protein though.
If you can dodge a wrench you can dodge a ball.

As far as the 6 in 1 tomatoes you just got, I also just got my first can and must say I think they are great.

Great Jefferey,

I got a case from Restaurant depot, 18 dollars for 6 cans the larger ones, will try some pizzas on wednesday, as for the flour Yesterday I made a batch and surprisingly the dough felt so good, I noted a difference so soft, I have a good feeling that I will make great pies on my wood fire oven, I only mixed for a couple of minutes by hand and seem to be better to handle than KASL flour, I will see the results and let you know.

I use 7/11 tomatoes.   They have more of the tang I like.   All Trumps hasn't given me much trouble with toughness.   But I kind of like my pizza to have a chew to it.  I mix 25 pound batches for about 5- 6 minutes when doing long ferments (more than a couple days in fridge).   For next day dough I do about 8 minutes.   I never tried the all trumps in a high heat wood fired oven.  All my pies are cooked on blodgett deck ovens.   Walter

Most pizzerias in NYC do use All Trumps (or another 14% protein analog, such as balancer), but they also commonly ferment the dough for less than a day- and, these days, almost across the board, make pretty crummy pizza.

This was different 20 years ago, but, right now, New Haven pretty much blows the NY area out of the water- and a contributing factor is that, in NH, 13%ish flours have the market share.

These are the flours I recommend tracking down:

Full Strength
Spring King
Occident
Pillsbury xxxx patent flour
King Midas Special
Superlative
Commander
Majestic
Springup
Perfect Diamond (I think this is 12.5%ish, but not sure)

Thanks Walter, I made 4 pies on wednesday in the Wood oven forgot to take pictures, and liked the results with All trumps just the right texture, and the tomatoes also pretty yummy.
Thanks for the info Scott, I am open to try different flours, as for now have to finish the 50lbs of all trumps.
I am starting a small business at home, I made a batch of 25 dough balls for this coming saturday I will see how it goes and post some pics.
