Chicago thin crust - sausage & chilean mushrooms

I'm officially a fan. Fun to make, and everybody loved it (adults and kids).

Topped with seasoned passata (garlic powder, oregano, black pepper, pinch of crushed red chilli), grated whole milk mozzarella, chunks of homemade pork sausage and chilean mushrooms. I rehydrated the mushrooms in truffle broth. Some pics:

Thanks bud! I'm a few hours ahead of you. This pizza actually was served after lunch - even then it didn't last long.

Chi-town Bob, I've been wanting to try this style for a while, especially after seeing some of your pics - with all that nice browned mozzarella and sausage :chef: I used the Lou Waters recipe that you referenced in your post- except I used vegetable shortening instead of oil. My dough was in the fridge for 20 hours, and left on the counter for another 8 hours. Hand spread, then gently rolled out and "docked" with a fork afterwards. I used shortening to grease the pan as well.  No cutter pan on hand, so I used my heavy steel sheet pan. Nice change of pace - and everybody loved it! Thanks

With only one more doughball left...this was topped half sausage, half pepperoni, along with some diced onions.  This time around I laid on the sauce with a heavier hand than before. Dried basil and oregano post bake  :chef:
