I roll it out a bit longer instead of into a circle, fill it like normal, and after I close it, I wrap the two ends back around.  It works well for our uses, and by wrapping it into a circular shape, I create a space to set a small dish of sauce.

Very happy to see that sauce on the side and not in it.  Is it loaded with ricotta as well?

This one didn't have ricotta, but I love them with lots of ricotta inside!
