Ty sir.  It ate really well.  No pics of my wifes pie (she gobbled it down fast lol) What cheese blend u going with?  Went with 50/50 boars head and sorrento mozz and then hit it real hard with some parmiagiano reggiano.

I put parm an oregano dust on sauce and then 50/50 Polly-o and Wally WM mozz.
6.5 min. at 560 stone...nice crisp and great pie but going to try another tonight after I get this oven jacked.  :drool:

Looks good.  Have u ever tried lining another rack above the stone with foil to increase the heat?  About 7 inches or so higher then the stone.  The quicker u get that pizza out of the oven the better it is.  Should be able to get close to 5min flat.

Did another tonight from that same day dough night before last....Nate's formula has legs; even more flavor with nice crunch at rim and perfect flop.
This was 4.5 on 615 stone and then 60 sec. down in broiler drawer(gas oven).
She be lip smack'in good ya'll...  Aieee.!..:chef:

Looks great Bob.  I made one yesterday that I had stuck in the fridge like u did.   It was excellent!
Give the false ceiling a try next time.  It gets my stone super hot.  I'll have to give you the original preferment recipe that is 17hr room temp and then 2-3 days in the fridge.  The flavor is outstanding.

Sausage and mushroom pie is one of my very favorites...seems like I always come back to that when I want to make a pizza with some toppings on it. Great job man!  :chef:
