Ok, “it’s Low Tech” for me now!  After  years of ”00” flours, hydration, proper mixing and ageing dough’s fancy grills on BBQs or 48000 BTU burners and still mind you not happy with my pies I’ve done a 180’ turn.  Shepherd's Grain HG flour with Wolfgang Puck’s pizza dough recipe, my FibraMent Baking Stone right off the “fancy grill” and onto my 10 year old Weber and my “Low tech pies were as I want them the first time out. Great, Great, Great!

GJ, I'm glad you found the solution for the pizza that you want. As long as you're cooking for yourself, it doesn't matter what anyone else says is best, because they're wrong haha!
