I personally love KASL HG flour for my Americana pizza and Sicilian. Bread flour also works well for Sicilian. I like 00 Italian flour for Napoletana pizza and I've read that AP flour is also good for Napoletana but I have not tried it. It is a matter of personal preference through experimentation. Keep trying different things and you'll come up with your best pizza. If you have issues with your dough you should post it to the Dough Doctor.
