Where those scapes shaved raw and topped or blanched beforehand?
Craig used a vegetable peeler on the garlic scapes to shave them down a bit. I love them to death and I'm hoping that I will find the last of this year's crop at the market this Saturday. I wouldn't be surprised if they are done for the season, however. Like ramps, they are only available for a limited time.
