As I mostly do only two to four pizza at a time, so I often hand knead. You could hand knead just about any NY style dough.
- Mix together water salt and sugar (if using)
- With a large spoon or you hands, mix in flour and yeast.
- With your hands, squish the oil in (if using) so it is well distributed
- Cover and let rest for 20 min or so (this step really helps)
- Knead away
