Looks great, when I make chicago style I garnish it with cheese after I take it off the oven to prevent the cheese from burning but it looks great brother. Nice color on the dough and everything.

Thanks man.  I have family roots in Chicago, and some of my first pies were at Pizzeria Due.  I put most of the cheese on the bottom, right above the dough.  I like to put some parmiggano and just a little mozzerella (or not) on top before baking with the intention that it will burn, to match the vertical stripes of burnt sauce on the sides. It's an esthetic call and I certainly respect your wish not to ruin the parmesan!  ^^^

For me, the main thing about Chicago style is to get a nice buttery crunch on the outside with a soft interior and plenty of cheese and  ingredients right up to the corner.  The crust really is the best part! The sauce is good, but it's sauce.

My lunch - Sicilian Pie. Although I've made many Sicilian pies, this was only the second time using my Lloyd's Pan and it was a little too brown on the bottom for me.  Need to cut baking time by 5 minutes.  It was still a yummy treat  ;)

Here are mine for the night...

Went with pizza as usual but these came out nice so I figured I would share!

First 1/2 pep. and 1/2 cheese... for the kids...

Then a BBQ Smoked Chicken with Bacon for the Adults with the Mad Hunky Pizza Shake on the crust!  Used ranch as the base sauce, a blend of cheddar and Mozz as the cheese and and onion and fresh bell peppers rings on top..  One of my most favorite pizzas that I do!

Nice pies, barkonbutts!

My three pies for the night are the usual plain and pepperoni. The other one is mascarpone and sliced fresh figs, then post bake finished with prosciutto di Parma and drizzled fig preserves and balsamic syrup.  Deelish!

3 of tonight's 5 pies... (also made a cheese and pepperoni and another margherita).  First pie was on about 30 seconds too long.  All were super tasty.

Tonight's pie (day 3 in a row of eating pizza)... was made with fresh cake yeast with 24 hour ferment at 65 degrees and final rise 2 hours at the room temp.

Great tasting pies!

58% hydration
100% caputo 00
2% salt
.1% fresh cake yeast

Exactly 2 minute bake in the BlackStone

Pics of my pie from last Friday - The first pie was way too thin and ended up tearing when I tried to remove it from the oven. Still tasty though! First pies experimenting with buffalo mozz, the first pie I didn't strain the cheese but the second I did a quick pat down, next time I'll take the time to properly dry them before baking.

Supreme pan pizza - browned bulk sweet Italian sausage, pepperoni, caramelized onion, orange and yellow peppers, black olives and WM LM mozzarella.  So delicious!

Halloween Pizza:  rosemary and black olives for the spiders along with fresh mozz and black olive pieces for the ghostly faces
