Thanks, Mark.  I try to build up littles cradles of cheese to hold the pepperoni slices in place and then launch pie carefully into the oven to avoid shifting.  Sometimes it works, sometimes not so much  :-D

I recently saw where Craig recommended placing them more to the outer edge and let them do their migrating thing.

Margherita made with 10% Camaboldi (30 hour ferment at 62 degrees)

and my wife's famous meatballs on a pie (forgot to take the whole pie shot)

Had one ball left from a few nights ago...

Just great pizza.  Slightly crispy on outside... Soft on inside with slight chew.  Good taste.

Here is one from last week. Jalapeno and Pepperoni.I need to buy another kiln shelf for better top heat, or a Blackstone oven. 63% Hydration,with a 4 day cold rise. It ate very well!

CB I got the steel and cooked 3 pizzas tonite. The large pie was cooked on steel @ 450. The small one on the stone same temp. The steel worked great!!!  These photos are the steel baked.
