Looking for info on hot bags
« on: April 10, 2012, 02:04:25 PM »
Looking for pizzerias that use disk, induction pellet or internally heated hot bags- how do they work for you in delivering hot, crispy pizzas, are they easy to heat up and use, and are the heated bags worth the expense over the regular thermal bags?

their are advantages in both disk and internally heated bags, the disk heating systems are somehow faster to charge the bag, but every bag must be charged individually on the heat induction , you can buy several heat induction machines but the cost is way too much, on the other hand internally heated bags, they can heat simultaneously, they take a bit more time but not more time than baking the pizza itself. the most important issue on the bag itself is that because should have ample front vapor vents, the bag should be insulated but not completely closed. regarding the induction bag, the cost is very high and i do not think it is worth , as for the internal heated bags, if the cost increase between the regular and the heated is 50-60$ then it is  acceptable because the quality of delivery will surely be better
