After a few events I'm finally getting around to starting this thread. Hopefully it will help and or entertain some of you.

A little info about the pizza-
Not Neapolitan. I'm using bread flour and baking usually between 750-825. I'm trying to serve a crisp yet tender crust with a more puffy rim. I like how they're coming out for the most part but am very interested to see how things change after a few hundred more.

Early observations about the business-
It's fun! I've always enjoyed feeding people and entertaining so that's easy. As John and others have noted it is also a ton of work. Prep, clean, schlep, cook, clean, pack etc etc. whew! :o

I'm really happy with how the FGM 1030 is performing too. Super efficient and well balanced bakes. It is murder on my back though. I am 6'2" and sore for two days from tending the oven. I believe current models have legs to raise the oven. Don't forget to think about this beforehand like I did! :-[

Anyway here are a couple pics from an event this past week that ringkingpin (Geoff) set up for me. No pizza pics-go figure! :-D It was an absolute blast that included some amazing wines. Like serious bucket list wines. I did pizzas for appetizers and the people raved. Thanks again Geoff! I'm doing a small neighborhood cookout tomorrow so hopefully I'll remember to snap some pizza pics.

Nice glad your put and about add the Jacks! no sense bending over for years I will send you a details pic of mine easy in and out so wont effect to look of that beauty ! itd  simple !! and probably about $35 each all in !

Hey Jeff, the pasta is going ok thanks. I'm hoping to add a couple shapes this summer including a long one. Also working on a fresh pasta program for stores and customers in Chicagoland this fall.

Thanks for making the haul Jeff!  Everyone loved the pizzas and your rig.  It's funny how guys just tend to gravitate towards fire :)

I drank a lot of wine, lol.  My favorites were, the different Ramonet whites, the 94 Haut Brion Jeraboum (which was drinking great, especially for an off year) and of course the unobtainable '90 La Tache.

So, today I did a small neighborhood gig- 25 pies on a solo mission. The commute was beautiful, only two streets over! Did I mention that this was fun, but lots of work? If I'm not careful I may loose a pound or two.  8)

I burnt the front edge on about 5 pizzas today trying to multi task. Chatting, shaping and oven tending is tough to do all at once! The dough was great but I can see the dough dance as John calls it getting tough in the summer. It was in the low 90s here today and by the time I was finishing the last tray the dough was beginning to blow out and was pretty difficult to shape. So they finished with 3 or 4 oblong pizzas. :-D

Mozza signature pizza. My version has garlic cream, mozz, green onion, fennel sausage and is finished with fennel pollen. This is probably my favorite pizza right now. This one could have used a few more green onions.

A couple more parties this past weekend. The first one was an interesting setup-we were on the side of the house with the oven and prep table next to the house with the buffet table across the sidewalk! I'll get better w the pizza pics someday I promise, but it gets frantic pretty quickly. I did get a pic of our first ever calzone though :-[

Got a new van too. A 2005 w only 20k miles! It was used at a local airport so it drove the same 2-3 miles lots of times. Hopefully it holds up because so far it's the only part of the biz I have a payment on.

I've also been roasting mushrooms at the event which people really seem to like.

Looks good Jeff! I'm keeping an eye out for a van similar to what you picked up. I know they're tough to come by in decent shape and a decent price. Do you keep your dough, toppings etc..in coolers or do you have a refrigerated prep table? Keep up the good work!

Chaz- Yes the van took way longer to find than I thought. I use a refrigerated prep table. I also have a couple of cooler bags for larger parties.

Nice Find ! 20K my 03 has 112 K but veryreasonable and so far runs great. and I know all too well about the "gets crazy quick" but gotta get some pie pictures from that FGM please  ;D

Hi Jeff, thanks for sharing.
I am still looking for a prep table and a van, very hard to get a decent one at a decent price.
I used my oven 2 times and in both occasions the bottoms cooked much faster than the top, so I am trying to learn how to control the oven better. I will send you pictures of the jacks my trailer has so you can do something similar to be able to lift it.
