So this past weekend was my first festival. Wow. Probably could've used a third person but with margins being tight on these I erred on the side of caution. It was ok most of the day but a late lunch rush had me in he weeds big time. Trying to make and cook was a bit much or that many people. At one time we were at a 25 minute wait for a pizza. Still the feedback was really good. Best pizza ever, where's your shop, etc etc. that's always fun to hear!
One thing I noticed during the rush is that the oven seemed to get really hot and I burnt 3-4 pizzas. The dough would fuse to the floor and burn. This was about 4 hours into some steady cooking but I was not running a huge fire. I ended up cooking most of the time off the floor but that put me further behind. Any ideas?
And I did get some pics! Remember I am not making Neapolitan pizzas.
