Hi Jeff, thanks for sharing.
I am still looking for a prep table and a van, very hard to get a decent one at a decent price.
I used my oven 2 times and in both occasions the bottoms cooked much faster than the top, so I am trying to learn how to control the oven better. I will send you pictures of the jacks my trailer has so you can do something similar to be able to lift it.

Maybe you are overfiring the oven? I'm not usually baking at Neapolitam temps, but this last party the owner had us wait 30 min longer than we planned to cook. I kept the fire going and by the time I moved the coals the floor was super hot. The first few pizzas were hammered on the bottom, so we had to cook off the deck for the next few while the floor cooled a bit.

You know I'm terrible at that right? Mostly because I'm changing it often. I've baked less than 500 pizzas and try one event at 750 and one at 850 etc. just to learn the oven.

So this past weekend was my first festival. Wow. Probably could've  used a third person but with margins being tight on these I erred on the side of caution. It was ok most of the day but a late lunch rush had me in he weeds big time. Trying to make and cook was a bit much or that many people. At one time we were at a 25 minute wait for a pizza. Still the feedback was really good. Best pizza ever, where's your shop, etc etc. that's always fun to hear! :chef:

One thing I noticed during the rush is that the oven seemed to get really hot and I burnt 3-4 pizzas. The dough would fuse to the floor and burn. This was about 4 hours into some steady cooking but I was not running a huge fire. I ended up cooking most of the time off the floor but that put me further behind. Any ideas?

And I did get some pics! Remember I am not making Neapolitan pizzas. :D

Very nice looking pies! Today I also finished most of the pies on the peel and my floor was 785

Thanks. I'm calling them wood fired pizza! It's funny how many people come up asking if I'm using 00 flour etc. The awareness on Neo pizza is pretty high. I explain that it's more inspired by the old coal fired pizzas but I really try to have a unique crust.

Only one pic from today's event and it's Mushroom and fontina again. I'm liking the way my crust is coming out.
