It's been said before...Pizza is (edible) art

Very pleased with my last NY pie. 65% hydration, 4 day fermentation in the fridge, baked for 5 minutes on a steel plate in my electric oven at 300degrees celsius.

Do you do anything to those mushrooms before placing them on the pizza?  They look perfectly cooked.

wahoo88 - this time around, IIRC, I simply sliced the mushrooms and laid them on the pie raw. Sometimes I rub some olive oil on the slices before placing on the pie. I stopped pre-sauteeing mushrooms some years ago.

Here's a pic of this afternoon's pie. Something about a properly balanced "plain slice" that I absolutely love. Out of the oven, I added some freshly grated Queso Manchego, and hand torn basil. For those that haven't tried Queso Manchego, imagine a milder, creamier version of pecorino  (it is also made from sheep's milk).
