Just back from the butcher...things are about to get messy

On hand: 5 lbs of ground pork (shoulder), fat and all, along with an additional 20% back fat
             2 lbs of fresh beef liver
             2 lbs of beef heart

             I've got a sausage in mind - one that incorporates oatmeal, liver and ground pork - but not necessarily the beef heart. Looking up recipes now. If you've got a good one that doesn't call for smoking or preservatives- send it my way!  Later, J
