White pie with linguiça morcela, leeks & red onion

Last night I made some brazilian sausage called linguiça morcela, which is a pork sausage made with pork blood and/or organ meat.  I skipped the pork blood and used a little calf liver (25% in relation to the ground pork shoulder meat), and seasoned with grated red onion, sage, salt and freshly ground black pepper. 

With plenty leftover from lastnight's sausagefest, I decided to top a white pie with raw bits of the sausage, along with whole milk mozz, thinly sliced leeks & red onion. This was a very, very tasty pie!
