What size pizza do you make at home?
« on: July 22, 2013, 01:29:53 PM »
I'm curious to know what an average size pizza is for those of us who make pizza at home.
Is it a 10 inch, 12 inch, 14 inch or is the pizza smaller or bigger? Is there a reason for the size of pizza you make, like number of family members, size relative to oven or dishwasher, etc?

13" Neapolitan in my WFO. I'd prefer to do 11-12", but I almost always need a pie I can cut into 8 slices and serve to 4+ people. Less than 13" doesn't make for very big slices, and more than 13" gets somewhat unmanagable in the oven with a 9" turning peel. That any my plates are 13"...

15" in my home oven (the biggest I can fit on my pizza stone).
Pizza is not bread.

Anywhere from 9-14in.  My stone is only 15in and peel is only 14in.

Thin crust is 12" each for me and the wife if we don't want leftovers
Thin crust is 16" each for me and the wife, if we do want leftovers

Deep Dish is 9" each for me and the wife, usually with no leftovers

I'll probably start small with the Neapolitan, when I try it, and go from there.

Funny, I have been thinking about this recently as well. I used to think the larger diameter pies were the way to go. I have been making between 13" to 17" and I have recently concluded that 14" gives me my best quality pies and balances the crust ratio to my liking. Additionally, dealing with the larger pies on a stone or plate that is only an inch bigger just isn't worth the hassle to me, especially when you are trying to turn out 8 or 10 of them. I usually cut them into 8 slices for the kids and as Craig pointed out, any smaller than 14" is too small to divide that many times.

13inch, but it has been a while since I measured . My peel is 13inches and I normally stretch to the edge.

Ouse the same method of sizing....my peels is 14" and the stone is 15" so I usually stretch to the edge of the peel.  Screens/pans I bought are 12" but have not really used them since my fiasco !

Thank you to those who have responded and those who have not, please feel free to do so. I am very much interested in knowing. Those who use a 14 inch peel or bigger, is fitting the peel in the dishwasher an issue or not much a concern?

I don't think it's necessary to wash it at all unless you get something bad on it. IMO launching is much easier if you don't wash since you have a microscopic layer of flour embedded in the wood grains.

You're supposed to wash your peel?

Good point Mark. I was thinking of a composition material peel verses a wood peel.
Wood would definitely not work in the dishwasher.

I would like to bake a larger pizza, but the largest pizza I can get in my oven is 14". Anything smaller, I still use the 14" pizza screen.
