Coconut milk "mozzarella" grilled pizza

Well it was really pretty good and a great option for someone who is lactose intolerant or vegan.

Just had my 19 year old son taste it--and he's a cheese head.  He thought it was very buttery tasting and was quite surprised when I told him the cheese was made with coconut milk.  The nutritional yeast in the cheese bumps up the cheesy flavor.

Actually, I made it myself.  It was for a sponsored challenge with unsweetened coconut from a company for 37 Cooks.
You can also use regular unsweetened coconut milk from the Asian section of your grocers.

1 15 oz. can of unsweetened coconut milk or homemade coconut milk
2 teaspoons agar agar
1 teaspoon white vinegar
1 teaspoon sea salt
2 teaspoons tapioca flour
1 1/2 teaspoons nutritional yeast

Whisk the coconut milk together over low heat until the fat and water are combined.  Add remaining ingredients except for the nutritional yeast.  Heat over medium, stirring constantly and bring to a boil.  Reduce to a simmer and stir for 8-10 minutes.  Off heat, stir in nutritional yeast.  Poor into shallow flat dish and cool.  Place in fridge once cooled a bit.  It will gel up.  Blob onto your dough or any other melty mozzarella dish and it will become some what gooey.  Not stringy, but oozey at least.

Let me know what you think.  It's actually pretty cheap and easy to make.  You can play around with the agar agar and tapioca flour amounts to get the consistency you desire.

Buffalo mozzarella is very low in lactose and is a great choice for lactose intolerant individuals.  You can get it at Costco!

Not yet, but I soon will be doing so.  Just need to whip up some dough.  I'm interested to see if the "cheese" will brown much.  On the grilled pizza, it just kind of melted slowly from the residual heat of the grill--I turned it off once I topped the pizza.  Usually get a bit more color on the top, but I flipped it too early.

 :drool: Wow that pie looks awesome! And that under crust shot is second to none, for me this attempt sings summertime and even does spring. Great job, for whatever reason this makes me want pink lemonade, ice, and rum :-D
