Buffalo Mozzarella cheese and water buffalos

I was about to get ready for making some pizza this weekend and needed some nice mozzarella, preferably bufala. We do have two companies in New Zealand that make mozzarella from buffalo milk and one of them is about 50kms north from my place. They normally sell their cheese via high end deli's, but I decided to give them a call.

As it turns out they keep some of their herd on some paddocks about 5 minutes from my home and that is also where the cheeses are made!

I asked whether I could get some from their farm place and they were more than happy to accomodate. The lady also said they had some new born buffalo calves and I could see them if I wanted to. Of course I wanted to.

Last one.

Check out the little guy in the background with his white mop on top of his head. We were told that all buffalo have different hair on the top of their head. One of them had a big white mop like the one in the pic but even bigger and more unruly and it looked like a big "comb over". That one was duly named "Donald" after Donald Trump..

All  if I have to do now is find a way to get them to agree  to let me have/buy a couple so I can graze them on my land.

Hey @dhorst, maybe we should buy an old abandoned farm up in northern NY and start raising water buffalos. I already know where we could have our milk processed into cheese. 8)

Saw quite a few water buffalo during my all expense paid tour of Southeast Asia back in the 60's.  Don't remember any mozzarella though.  ::)

I'm in!  I know a couple of places we could do this--perhaps on my parents property or the farm land across the road from them.  Lord knows I had to help get the cows back across the road when they decided to make a break for it and munch on Dad's field.  The farm is no longer a working farm, so I think it would be doable.  How much manure are you willing to shovel? :-D  Oh, right, that would be my end of the deal since you're on the processing end of things.  No matter.  I live in a household of guys.  I'm used to putting up with B.S. ;D
