Ok this is getting good! Today for flour we used Caputo 00 pizzeria flour with Wolfgang Puck's recipe for his perfect all purpose pizza dough. I wasn’t happy with my first crust rim with only 30 minutes proofing but the second pie had a 90 minute proof and that’s the secret. So next time, one hour first rise and one hour proof.
Our first pie was a Thai Mango Paradise Chicken with a Thai peanut sauce which we bought at our local great Thai restaurant down the road. Soft shredded mozzarella cheese with local fresh Bing cherries.
Our second pie was half Mango Paradise Chicken with fresh picked Sweet Basil wilted on at the last minute. The other half was fresh tomato sliced with crushed Oregano, soft shredded mozzarella cheese and sliced Molinari pepperoni, c'est une grande pizza!
