Has anybody tried Einkorn flour for pizza?

I have some flour and whole grains. It makes a less gluteny crumbly bread, but its delicious. I was hoping to hear it might be possible to make a great pie with it despite the lower gluten factor. In case you don't know what einkorn is it's an ancient ancestor to modern wheat. I'm not a big fan of the gluten free craze but I like lower glycemic foods. Pizza is a must have still.

While you are waiting for responses from current members, you might go to the search page at http://www.pizzamaking.com/forum/index.php?action=search and do a search using the term Einkorn. That should give you posts by members who are no longer active on the forum.

I have tried it for pizza dough... wasn't very good texture wise... had a good taste though.  I was using my kitchen oven though... I will try it again with my wood fire over.

I am going to experiment with a 50/50 mixture of Eikhorn and Caputo....I will experiment with other ratios as well until I get something I like as I have several bags of eikhorn I need to use up.

Love their pasta products.
