I am looking for a basic wood fired oven dough recipe. I have a mobile oven and would like to develop a dough that I can achieve a 120 second bake with. I am open, and would like to try, both cold and room temperature fermentation. I have Caputo 00 flour and will be using dry active yeast. Initially, I will be working the dough by hand and making 5# batches. I have one week to try and figure a recipe out that I can use for my daughters graduation party. Any help would be greatly appreciated.
