Refrigerating tomato sauce
« on: August 03, 2013, 08:52:48 PM »
I'm wondering if it makes the sauce taste worse generally. When I worked in produce we could NEVER put the tomatos in the cooler because it would make them mooshy and tasteless. I'm guessing this happens with this as well but less.  :-\

If you never have leftovers there is no need you refrigerate. Lots of dogs are good for that. Or two beagles :-D .
I have also heard that tomatoes should stay out of the fridge before use.

I've kept my sauce refrigerated for a week or more without noticing any degradation in the quality of the sauce.

I always throw out leftover sauce at the end of the night. I think it tastes awful after a night in the fridge.

Into the fridge and used for a cooked sauce for pasta or whatever in the next day or so.  Or into the freezer for the same thing.  Don't use them on pizza again.  Can't stand throwing perfectly good food out.  Somebody/something eats it.

Yes, it normally gets recycled into spaghetti sauce.
