OMG! Smoked Peppadews

So I had 3/4 jar of peppadews from last night.

Poured them into a square cake pan and threw 'em into the still-warm pizza oven with coals from last night. Added a stick of alder and smoked at about 250 for 1.5 hours. The sugar in the peppadew liquid caramelized and the peppers dried out partially. I added 1/2 cup water to the pan and allowed them to rehydrate and to "deglaze" the pan.  Wow. Try this.

Oh yeah, and smoked cherubs ain't bad either (salt and EVOO).

Guess I know what I'm going to do tomorrow or Thursday!  Did you stuff the peppadews?  I love them stuffed with goat cheese, ricotta or fresh mozzarella.  Feta is pretty good too.

I love pappadews! Stuffed, not stuffed, on pizza (of course!) sandwiches, salads....But i haven't had them smoked. This is now on my to do list! Thanks for the heads up!  ;D

I'm sure that the expert smokers here could do a cold smoke and add the cheese. That would be stellar. This was a hot smoke and the peppers themselves got mildly black on top from the smoke and heat. The cheese would have melted.  And I would have eaten it all with a spoon.

I ate half a Costco box of the smoked cherubs for dinner. Was good. Will report on digestion issues as they arise.

You will love 'em! Don't forget to rehydrate after smoking. Transforms the "standard" pepppadew liquid into something MUCH better!

They are pretty darn tasty simply poured hot out of the smoker over burrata (or sliced fresh mozzarella) - maybe with a little evoo as well - maybe some garlic - and some sea salt. There are flavor compounds in tomato that are not water soluble, so a little oil from the melting cheese or evoo brings a lot out of them.  Top it with something fresh - basil, chives, marjoram, etc.  They are good on goat cheese as well, but really need evoo in that case as you won't get much melt out of the cheese. Fresh thyme goes great on this one.

They are also exceptional served with a great oil-cured tuna with some chilies and fresh chives or parsley.

I have done roasted tomato soup with smoked tomatoes too - no real recipe,  smoke/roast the tomatoes (usually plum) and some garlic, saute some shallots, onions etc,  add the tomatoes and some chicken or veggie broth, simmer for awhile, buzz it with the stick blender.  sometimes add a little 1/2 and 1/2 or cream.   Best with grilled cheese  :D
