I also use my brewery for sous vide. I made up a PID based recirculating (RIMS) water heater for my mash tun for doing stepped mashes, and of course it works perfectly as a sous vide unit as well. Recirculation is done with a March pump, and the copper cylinder on the outside of the mash tun contains the heating element.
Again....a bit more than $199 and not as shiny as yours!
I have a stalled sous vide project as well. I have an electric stainless steel bain-marie that I was going to fit a smaller pump and PID unit to....should really get that going again....
