Melting cheese

I have been making NY pizzas lately and melting the cheese to the lava boil until the sauce intermingles with the cheese to a reddish tint. Does anyone else do this? I've never quite dine that before and was won :pizza:dering what extra info on this trick was out there. It seems to caramelize it to a less milky flavor. You gotta try it if you,haven't.
