sams bread flour protein %

does anyone know how to tell the protein % of flour  from a label? thx

Nominally, the protein content is 3g/30g = 10%. However, because of rounding factors (e.g., according to http://www.ecfr.gov/cgi-bin/text-idx?c=ecfr&sid=563f0b6235da3f4c7912a64cbceec305&rgn=div8&view=text&node=21:2.0.1.1.2.1.1.6&idno=21, protein content is specified to the nearest gram and serving size to the nearest whole number when the serving size is more than 5 grams), so you can't rely too heavily on the nominal protein calculation. As Farmer Brown once told us at Reply 5 at http://www.pizzamaking.com/forum/index.php/topic,9483.msg85728/topicseen.html#msg85728, you apparently would need a Certificate of Analysis to know the protein content of the flour in the bag. I believe that ADM produces the flours for Sam's so you might find a telephone contact number at the ADM flour website (http://www.adm.com/en-US/Milling/USWheat/Pages/default.aspx) and call them to see if you can ascertain the protein content of the flour you purchased. Or maybe another member with the answer will tell us.

i must have removed my post as you answered, very sorry. i had googled trying to see the method used and was disappointed to see it was 10 %.
 99% of everything i have learned  on here came from you and i have always appreciated anything you had to say. will try and call them for actual %

adm  wasnt claiming bakers and chefs from sams as theirs but they  guessed it was 11%. so  if thats true its  just a little better than a generic ap on the food sim  calculator list and would need a lot of boosting with vwg to get to 14%

According to the opening post at http://www.pizzamaking.com/forum/index.php/topic,12791.msg123606.html#msg123606, it appears that the flour that you purchased is milled by ConAgra and has a protein content of 11.4%. That is in the bread flour range and not much lower than the protein content of the KABF. So, I don't see any need to supplement the flour with vital wheat gluten. Interestingly, the flour you purchased, while bleached, is not bromated, unlike most of the ConAgra flours.

 your knowledge and  willingness to help people with any and all things pizza is extraordinary.
kabf is  close to $6 a bag while sams  comes out to a buck and a half for 5 lb. i feel better knowing its not the 10% it appeared to be at first glance
