What Flour for Pizza?

 :o Hi, I still see some using Hi Glutin flour and others not. Seems everyone has their own "best" when it comes to Dough flour.
I have used King Arthur Sir Lancelot Unbleached Hi-Gluten Flour - 3 lb. and thought it came out pretty good but that was my first attempt to create a great pizza at home. Some others have any ideas on flours to experiment with?

Bobcat,

I personally love KASL HG flour for my Americana pizza and Sicilian.  Bread flour also works well for Sicilian.   I like 00 Italian flour for Napoletana pizza and I've read that AP flour is also good for Napoletana but I have not tried it.  It is a matter of personal preference through experimentation.  Keep trying different things and you'll come up with your best pizza.  If you have issues with your dough you should post it to the Dough Doctor.
