as soon as midterms are over, i'm heading to the airport and going home for spring break.  i intended this recess from school to be a boon for my pizza making, but my mother just recently informed me that our oven is broken.  as a result, i may try grilling a pizza, though i've never used a grill before.

Today I made a small pan pizza cause there was nothin else to eat.  I generally only make pizza on the weekends though.  Did ribs this past weekend so will be back to pizza this weekend.  Still not sure what kind though..  Probably NY style.  With lots of mild italian sausage, mushrooms, and black olives.

If the weather is good, I'm breaking out the smoker.

If not I've had I'm going to try a new one out of American Pie.  Maybe the Roman style.

I'm continuing to try and perfect my NY style.. make dough on thurday.. and pizza and a nice red wine every Saturday night.. It has really helped me tweak my recipe by doing it every week and making small changes, oh and reading all the great advice here of course.. ;)

New Spicy Sauce.  Excellent!!! Pizza crust pretty good. Had to do quick rise for wife and kids dinner. ;D

My NY.  I tired adding a teaspoon of sugar to my sauce recipe and was quite pleased.

I keep it pretty simple:
Dough:
2 3/4 cup of flour
1/4 cup semolina
1 cup water
2 tsp yeast 1 tsp sugar
3 tblsp oil
(Semolina is opional)
Let rise for one hour, place in frig as long as I can

Sauce 1:
6 in1
1 Tblsp sugar
oregano
basil
garlic salt or powder
simmer for 30 minutes

Sauce 2:
1 small can of paste
2 small cans of sauce
same spices as above
simmer for 30 minutes

I cook it for about 12-14 minutes at 500 degrees, turning once.

Works for me!
