Yes it was!  Here are some shots from yesterday and today.  We make a healthy chocolate chip cookie that meets the new federal wellness law for school food.   I worked hard on this recipe to get it to taste ok and still be healthy.  We made 3,000 yesterday and 1000 today.  You can see my crew standing in front of the racks that are filled (60 slots with full sheet trays) of the cookies.  Then it was on to bagels.  We made about 700 yesterday and today.  they are hand rolled, boiled, baked.  Again I had to develop a recipe to fit the wellness laws.  Standing in front of our delivery van bringing bagels and cookies to Granville School District's main kitchen and a shot on the loading dock with their 2 chefs.  Granville is on the leading edge with farm to market, fresh, organic, local, foods for their schools.  I have made a friend that is a retired Ohio Dept of Agriculture employee whose job was nutritional analysis.   He donates his time to analyze my recipes till I get them right.  Luckily I have hit it pretty much first time so far.   I wish I took more production in action pictures but I am too busy to remember.  Cutting each bagel to 3.5-3.6 ounces puts one in a real zone and I find it quite meditative.  Pictures of our plain, cinnamon rasin, and blueberry bagels. All those sheet trays are making me wonder if you've ever considered Sicilian Style as an added menu option...

I'm thinking that it might be a way to maximize output and profitability.

I look at the pictures of your assistant manager Paige, and read your words describing how valuable she is to your operation and I can't help but wonder what her parents must think of all this. Do you ever get a chance to meet them? Are they amazed at what you have helped her to realize in terms of her potential? They really should be.

You are helping human beings to be "useful" in the world, and that is probably the greatest gift one individual could ever give to another person.

Hi John:  Thanks for you continued support with this endeavor.   I do make a sort of deep dish/sicilian hybrid that we cook in the deck ovens in a cast iron skillet.  People love it.  I have thought about a pure sicilian but we don't generate enough customers to diversivy much - end up with lots of partial pies left so I keep our line up simple.  1 size pie with either cheese or pepperoni.  The deep dish thing is on a whole pie that is ordered in advance basis.  Our main deal is by the slice, with whole pies next.  They  are usually for events and are big orders like 50 or so.  We have one coming up Monday and will make the dough this afternoon. They are busy days for sure but these old blodgetts love to work.  The general public still has not wrapped their  heads around our thing.  That is ok because we have more than enough business from commercial accounts without advertising.

  Paige is a treasure.  She would readily share that at birth she was given a 1% chance to live.  Her first year was in OSU Childrens Hospital with so many surgeries/tubes coming out of her that she  had to be put in an induced coma for over 6 months.  Today she is healthy as a horse and lives with her grandparents.  They are retired hard working people that rent a  house.   Paige is lucky to have them.   They are proud of her and it does make my day.  I feel so lucky to get paid for doing what I do.   Today we just got another order for 3,600 cookies.  They went over big yesterday in the Newark City Schools cafeterias.   Life is so good I feel like I am in a dream often.   Take care and again, thanks for all your support.   Hopefully someday you will be passing through and see it firsthand.    Walter

a short video our high school news channel did on us last year.  Since this video my adult aide has been replaced by one of my students(one boiling bagels).  I am just realized my camera is also a video camera.  I am not much into computer technology but I will figure out how to film our operation.  Walter

Today a local apple grower brought in 2 buckets of organic apples for us.  When I asked if I could pay him he asked if we could make him one of our apple pies.   Tomorrow will be a busy day with many pizza orders and probably a couple dozen apple pies as well as our regular bagel/cookie orders for the schools we supply.  There will be some crazy smells coming out of our kitchen tomorrow!  Walter

Deb: Paige is doing great.   Working with normal people and being out of the world of special education is a huge adjustment.  Her entire school experience has been with kids that throw fits, have bizzare behaviors, and act at the 5 year old level most of their lives in many ways, She has had a few bumps so far but has  overcome them.  I have to spend a lot of time working with her to  understand how the "normal" work world works.  It is like entering a new planet and something we will never really comprehend because we were born with normal cognitive abilities and schooled in regular education classes.

Bon Appetit is short staffed and are letting workers put in as many hours as they want.  She insisted on working 7 days a week.  I thought it best to let her find her level and let her go for it. She started out working 40 hours a week plus working in our program all day at the high school.  She has begrudingly backed off to a F-M schedule/about 25 hours.   Her heart was in it but she was exhausted and the head chef and myself convinced her to slow down a bit for now.  The head chef says she is the best prep person they have.  She has branched out from just pizzas.   Another of my students, who turns 18 next month (got to be 18 to work for bon appetit) will start next month with Paige.  Thanks for asking!  Walter

communist:  You got it!  These apples are not real tart like I like for apple pies but they are flavorful enought to overcome that.  I am off to GFS first thing in the morning to get a big tub of Crisco and pie pans.  We sell our pies for $10 and quite a few people buy them.  Walter

thanks everyone- we feel the love!  Yesterday I got a call from Columbus (saw it on my school phone caller ID).  I picked it up and the man told me he is a retired plumber/plumbing company owner and is now teaching in a private school for Autistic students.  He is teaching entry level plumbing skills and finding jobs for them.  He then goes on to say that they are wanting to open a bakery next and found us on an internet search for NY style Pizza.  That blew my mind.  They are only 30 miles away and never heard of us.  We are way under the radar with no advertising of any sort.   They are coming by Friday to see our set up.  I am excited to share all I know and hope I can be of some help with making their venture a success.   Thinking that more disabled people will find a meaningful life gives me more energy than a 20 year old!  Walter

some pictures of todays pies.  Next week is homecoming week and Friday there is a carnival during lunch.  We are allowed this 1 day of the year to sell our products during lunch.  Students are constantly coming by our room and asking to buy our pizzas but I have to tell them we are not allowed to sell our goods to students before or during lunch.  We are allowed to sell our goods for 5 minutes after the final lunch period (3 lunches in our school) but by then most kids are full.  We will probably make 40 pies for this event.  I am going to get a volunteer to help my students man our stand and we will shoot the pies out so they are still hot when served (ideally  :)

Paige continues to do great at her job and another of my students will start working there also when she turns 18 in a couple weeks.   Paige has been confused by people in her life wanting to borrow money from her since she has been getting a paycheck.  They don't pay her back and I think she finally got it to say no to them.  Walter
