Could make a margherita leaving off the cheese...also often see sheet pizza/pizza strips that way.
Also add toppings like sausage, peppers etc. that you like.
If garlic ok before the show, make a clam pizza - mix juice from clams with olive oil and minced or crushed garlic and some black pepper to use as your sauce, put shucked or chopped clams on top, sprinkle with dried oregano (leaving off the romano cheese normally sprinkled on too). Others make this with clams in the shell layered on top of the pizza, they open when cooking, scape out and pour the juice on top of the pie after cooking.
For spicy, use 'nduja as a base, put dollops on as it will spread when heated, top with meat/chicken/veggies.
