Italian Sausage on a 10 inch or 12 inch Neapolitan pizza

Anyone have an idea of how much (weight wise) sausage is used on a 10 inch Neapolitan pizza?  And a 12 inch?  We have a catering gig coming up where the family wants us to use the sausage they make at their deli, and I'm trying to figure out how much sausage to request from them.

1/6 lb per pizza?

Just an idea. Why don't you buy a pound of their sausage and make a 12" pie to your liking. Weigh the unused portion of sausage and you got your answer.

I actually just picked up some pork sausage to run a test to see how it will look cooked, and how it will spread on a pizza.  Thanks for the suggestion.  ;)

I just wanted to see if anyone had any standards that they normally follow.

Do you guys pre cook the sausage or put it on raw?  I'm thinking NP you would pre cook and NY you could go raw cause of the longer bake time or maybe NP raw cause of the high temp, crap I don't know :-D

I always put it on raw in 1/2-3/4" pieces. At 900F+, it's fully cooked in less than 50 seconds, and all the wonderful juices stay on the pie - not wherever you precooked it!
