Man is talented in stretching out and tossing pizza dough

I saw this video of opening and tossing pizza dough reposted on facebook.  http://thekidshouldseethis.com/post/58055459287  I really like the music and how fast the man opens, tosses and spins the dough.



Wish I was half as good as him.

Life's just not fair eh Norma, I'd have holes flour and bits of dough everywhere if I tried that  :-[ only thing I thought strange was when he removed the finished pizzas he put the peel down with the blade (if that's how it would be described) on the floor  ???

Lol, I agree Pizzaboyo that life isn't fair.  I have opened up many pizza doughs, but never will be as good as that man.  I didn't see the part where he put the peel on the floor.  I was too busy watching the opening part of the video.  Will watch the video again.

Interesting that he hung his launch peel blade up and turning peel blade down, perhaps on the floor, although I didn't see the floor. What always amazes me is how extensible the dough is, to be handled like that.

Seriously... what kind of dough formulation is that? If I tried that with my dough, there would be holes all over the place...

And, in all honesty, that's how ANY pizza should be eaten...

He is FAST, but what is amazing to me is the length of time the opened dough sits on the table before being put on the peel. If I did that, my dough would be stuck to the prep table. That has got to be a record!

I know most of my skins would stick too if I did that.  I posted a video recently from when I visited De Lorenzo's/Robbinsville of a man there opening their dough balls.  What I found interesting is he stacked the opened skins on top of each other.  I have no idea how soon they then were used to make pizzas, but I wonder how they can stack skins on top of one another and not have them stick together.

Maybe someone should start a thread of interesting techniques on opening dough balls into skins.

I was the slowest too when opening dough balls when I first started making pizzas.  Just keep practicing and you will get better.   ;D

You might be surprised how good those pizzas were after the skins where pounded opened with finger tips and then were stacked.  They did stretch the skins some more before the final pizzas were made.  They probably were not stacked for that long though because De Lorenzo's/Robbinsville was very busy.

One day I too will have an order for 10 pizzas.... AT THE SAME TIME!!!! 7 Pizzas from start to finish in the oven in less than 7 minutes! That Mario is awesome!
