Hello everyone.  I recently completed construction of my Forno Bravo Premio2G 100 WFO and have been having a blast learning the finer points of making pizza.  I'm interested in learning more about dough hydration, fermentation, and all the subtle differences in creating great crust.  Let the learning begin!
