im new at this..
i want to open a pizza joint next year.. i was convinced i wanted a gas oven, because of the strict air policies in my country (chile)..
if i could, i'd go for a wood fired oven.. but the thing that concerns me is the smoke.. in Santiago some days are called "pre-emergency" and "emergency" and all because of the air pollution... some cars cant be used those days.. and the chimneys are forbidden..
so i have to ask.. is there a good system for filtering the fumes? do you guys know any brand that could recommend me?
any experience on this??
