hello there..

im new at this..

i want to open a pizza joint next year.. i was convinced i wanted a gas oven, because of the strict air policies in my country (chile)..

if i could, i'd go for a wood fired oven.. but the thing that concerns me is the smoke..  in Santiago some days are called "pre-emergency" and "emergency" and all because of the air pollution... some cars cant be used those days.. and the chimneys are forbidden.. 


so i have to ask.. is there a good system for filtering the fumes? do you guys know any brand that could recommend me?

any experience on this??

Acunto (Mario) has one - requires no ventilation.

Craig,

I saw that device previously when you mentioned it. As far as the smoke goes it would be great. Do you have any knowledge as to how the lack of a standard flue would affect the performance of the oven? I am assuming that this device provides some sort of draft, but would it be enough to get the heat needed to cook pies as they need to be cooked?

Either way, I'd love to see that device in action.

I propose that we start a collection so that you can try it in your setting!

Pizza ovens aren't pressurized by the flue, so it has a very minimal effect on the ovens functionality.  A piza oven will work fine with no flue, you will just have smoke in your face.

Well that must be quite a system to process (effectively) all the smoke that is involved on starting a fire in a WFO.

Didn't realize the nil effect of chimney/flue height on oven performance. I had assumed it was important!

What Happens if the electricity goes out or the device fails while there's a fire in the oven?
