Long time lurker, on a neapolitan journey

I've been lurking here for a while and reading a lot of threads.  Caught Neapolitan fever a year ago after reading Jeff Varasano's website.  I did the oven mod, cutting the lock mechanism, but found it hard to control the temp.  A few months ago I relocated our kitchen pantry to make room for a brick oven in our kitchen.  It's near completion, at the curing stage.  Very anxious to build the first fire and cover with ceramic blanket.

I have an ambitious plan to make pizzas for my wife & son's birthday party in two weeks, which may be the first time using the oven.  Good news is the local pizza shop is a 1/4 mile away if it goes poorly.  :-[

Main purpose of my post is to say thank you for the great resource here - a wealth of information.  In particular want to thank Craig for the in depth information.  My goal is to someday make pizza like his Margarita pie.  :chef:

 Awesome looking job on your oven build! The lighted entry is a really nice touch! Count me among the jealous to have your oven in the kitchen with you! I don't think you'll be needing that pizza joint down the street. ;D

Thanks - the light was more of a novelty thing.  The wire and switch were already there after removing the pantry, so I figured 'why not?'.

Finished curing fires and insulated the oven this morning.  Maintained a medium size fire for most of the day with a big fire around dinner time.  Overall very happy with how things worked out.  Came down with the flue the day after making making dough.  (I had visions of dealing with a different kind of flue this weekend  :) )  Put the dough in the fridge and it seemed to be ok, maybe a little over fermented?  Dough opened up nicely, smooth and supple.  I don't have 00 flour yet, comes in on Tuesday, substituted KABF. 

I think I left the cornice too large when pressing out the dough.  What do you guys think?  By the way, the topping on this pizza was marinated Moose and it tasted awesome.  The rest were traditional pizzas, like Margarita, but I failed to take photos in the rush of things.

ML,  just looks like an overall case of too much dough.  Whats your recipe/dough ball weight/diameter/thickness factor?   -Marc

I used Craig's recipe, but failed to measure the dough balls.  Was feeling lousy and rushed to move the dough from bulk.  Looking back now I realize the dough balls were WAY too large based on the amount I had in bulk.

The stonework you did is so precise. Plus the location in your home and venting is genius! I've always had oven envy of TXCraig's garage set up. Now, you've given a second thing of beauty to envy! Great work!
