I've been lurking here for a while and reading a lot of threads. Caught Neapolitan fever a year ago after reading Jeff Varasano's website. I did the oven mod, cutting the lock mechanism, but found it hard to control the temp. A few months ago I relocated our kitchen pantry to make room for a brick oven in our kitchen. It's near completion, at the curing stage. Very anxious to build the first fire and cover with ceramic blanket.
I have an ambitious plan to make pizzas for my wife & son's birthday party in two weeks, which may be the first time using the oven. Good news is the local pizza shop is a 1/4 mile away if it goes poorly.
Main purpose of my post is to say thank you for the great resource here - a wealth of information. In particular want to thank Craig for the in depth information. My goal is to someday make pizza like his Margarita pie.
