Peter, the white crumb is actually somewhat indicative of a very young, same day dough,  which would normally bother me tremendously.  With the extreme GBD, though, the crumb flavor (or lack thereof) isn't that noticeable.

Im glad someone with pizza knowledge can understand why this pizza is so unique......next week i ordered two bags of all trumps, im dropping my ovens and starting my experiments.........ill leave fat out of the equation for now.

My main concern isn't the texture....im pretty sure i can achive that...im interested in the spring........maybe i can make up for the lack of heat with a different pounding technique....and im going with Craigs suggestion on oven temp........its nice to be a bit excited again.
