Cooking times on the deck, Parchment paper and Lloyds pans
« on: September 11, 2013, 09:09:47 PM »
I am cooking in a Nemco countertop pizza oven at 500F.

Pizza cooked direct on the deck.  takes about 10 minutes.  nice color on the bottom but I would like a little more color in the cheese. ( some people would consider this great but I like a little browning of the cheese)

Pizza cooked on parchment paper. takes about 12 minutes.  medium color on the bottom my perfect color in the cheese.
I like pulling the parchment paper at about 9 to 10 minutes than I get the perfect cooked pizza bottom and top  but the opening the door and doing adds 30 seconds to the bake.

Pizza cook in Lloyds pan. takes  14 minute top very caramelized cheese and bottom very light brown.
I like to remove the pan in about 8 minutes it finishes on the deck in about 12.5 minutes.

Just sharing information some people may not realize how the cooking profile changes
