Smoked pulled pork and black bean crispy crust
« on: September 27, 2013, 01:17:20 AM »
Loaded the pressure cooker with a pound of dried black beans, 1/2 of a pork butt, and 5 dried chiles: ancho, puya, guajillo, chipotle, and arbol (whole pods).  After the cook was done, pulled the chiles, de-stemmed and de-seeded, then placed in a small pot with the cooking liquid - blended smooth with a stick blender.  Salt and peppered to taste (the cooking liquid contained pork and black bean goodness, and was absolutely delicious)

Pork was pulled, and then chopped - black beans were slightly mashed.

Now it is time to build the pizza - crust was grilled on the gasser, then topped with home smoked cheddar cheese, black beans, pulled pork, the home made chile sauce, and half of the pizza with heirloom tomatoes.  Then into the wood fired oven to finish.

That would be good with some Scott's Carolina Vinegar BBQ sauce and some cole slaw served up with it!!
