It's an incredible dough

Who can tell me about this dough?

It's an incredible dough, After calculation, the composition of salt is rare. but my teacher said this dough contains much salt.

According to calculation of Carbohydrate and Protein, the eating feeling, it is a high-gluten flour.


100g dough/per   

Food energy 300kcal
Carbohydrate 72g
Sugar 0.3g
Protein 9.3g
Fat 0.6g
saturated fat 0.18g
trans fats 0
Natrium 80mg


flour(usa,canada), yeast, water ,sugar,salt, Soya-bean oil, dough conditioner (whey)

I'm curious where the recipe is from or where you are located that you call sodium by the Latin natrium (incidentally why the symbol for sodium is Na).

I think that nutritional information must be for the baked dough - not raw dough. Flour has at least 72g carbs / 100g and more than 300kcal / 100g.

I understand that. My question was where are you located - I see now that you are in Korea. I didn't realize that there was any place on earth that still used the old Latin word natrium for sodium.

At an arbitrary value of 60 percent hydration, that dough would be ~1/3 percent salt, by baker's percentages.  That's very low.

I don't see how those numbers could possibly be correct. To get 300kcal from 100g of dough, you would need something like the formula below which is 21% hydration. Even so, you wouldn't get up to 72 carbohydrates, and that dough would crumble in your hands. In addition, you will get at least 0.3g sugar and 0.6g fat from 100g flour, so I don't see how there could be any added oil or sugar as the ingredients you listed suggest. Also, you show no yeast. And, as ThePieman noted, there would be nearly no salt in the formulation - something like 0.25% given this much flour.

I was simply showing that my estimate of the formulation of the dough used in this product: http://www.pizzamaking.com/forum/index.php/topic,17632.msg201318.html#msg201318 matches up at those three data points with the nutritional information on the package - you will notice that the serving size is 57g and has 120kcal, 25g carbohydrates, and 190mg sodium.

Indeed I did it again and got what you got. Don't ask me how I got the total I originally came up with. Fat fingers, I guess.  ;D

Many developing Asian countries still incorporate the old latin designations for chemical elements into their local language. In malay, copper is still called cuprum, sodium is natrium, potassium is still kalium, and so on.
