Grande East Coast Mozz

Guys:

Luv the buttery taste of this product....Nearest place that has it is Penn Mac in Pitt PA. Can I Vacuum Pac the slices in 1 lb packs and Freeze it??If yes how long would it last. Also would one need to put paper between Slices?? I am a home pizza maker.

I vacuum seal cheese and it keeps for months in the fridge. Why freeze it? Mozz actually gets better after it's aged a bit in the chill box.

Hi Guys:

In am in central NJ...as far as I know Penn Mac is the closest...unless you guys know of any closer to me. Acording to the Grande website Grande Mozz has a refridgerated shelf life of 42 days. Penn Mac sells 7 lb blocks and I can easily go through it in 3 months or so.

An option is to call your local pizzeria and ask if they will sell you a block.  I've bought cheese from my local pizza joint :). Most of them use Grande.  Good luck.

E&S Foods, in Central NJ immediately off Rt. 10 exit of Rt. 287, does cash-and-carry on Fridays...restaurant bulk size/quantities, but has Grande fresh mozz as well as curds (and Caputo 00, great assortment of tomatoes, etc)

Just wondering if I will get a wholesale price on a case of Grande cheese
Very happy with Bova food but would like to check out other cash and carry places.....JT

Johnny,

You can call ahead and ask them what the price is for a case.  They don't allow anyone into their warehouse, so you have to know what you want.  Their product catalog is on their website.  They don't break cases of cheese so you have to buy around 6 to 8 bags/loaves.

Yep I took a quick look at their catalog(need to look a bit harder}
Just thought that they had a Cash and Carry area where you can look at what they have on site.
Want to see what Brand of Dough balls that they sell by the case and also Frozen Fresh Veal Cutlets by the case
and brands of sauce that they sell..................JT
