I'm a super n00b who loves pizzas, but I don't know all there is to know about the equipment..
I run a small pizzeria with a 4 rack bakers pride electric oven. It usually takes about 40 minutes to heat up, and even longer to get the bricks where I want them. I was told that I could leave the oven on all night. My source (who is pretty reliable with the info) told me that the bricks would be ready to cook as soon as I got in, AAAND I'd even save money on the electric bill.
Anyone out there have any info on this? If this was already posted somewhere on here I'm sorry.
